It's time for my Friday link up with A Little Bit of Everything and Momfessionals.
Hello, Friends! It's been a reasonably good week around here. My boys have all been home, I had a birthday, and to top it off there were no insurrections that I know of which I always find to be a plus.
Also, it's Friday and I have some favorites for you today.
1. Buffalo Chicken Casserole from Healthy Little Peach
https://healthylittlepeach.com/ |
I felt like I needed to make some "football food" on Monday for the College Football National Championship, but since I'm hoping that in 2021 I might need to wear real pants again soon, I looked for something healthy-ish. I found it at the Healthy Little Peach blog. This Buffalo Chicken Casserole is SO good and it is Whole 30, Paleo, and Keto compliant. My guys had no idea. I completely fooled them. They ate it with non-Whole 30 tortilla chips, but I skipped the chips. Drew declared "Mom, this stuff slaps." This is apparently high praise.
2. Coach Sark, I'm Counting on You
Speaking of the National Championship, all day Monday I was kind of like WHATEVER, MAN because it's Alabama again, and it's Coach Saban again, and blah, blah, blah.
I'm not saying I'm a hater. I don't hate on teams just because they happen to be consistently, exceptionally talented winners every darn year, but I was a little bored with the whole thing.
EXCEPT, as I watched how many points the 'Bama offense was racking up, I got more and more into the game because one Coach Steve Sarkisian will be the new head coach of my beloved and beleaguered Texas Longhorns next year and with each score I was all:
A couple of side notes for those of you who enjoy a full and meaningful life that doesn't revolve around worrying about the coaching staff challenges at D1/Underperforming/(Very) Formerly Championship Caliber College Football Teams:
1. What is that like?
2. Coach Sark was the Offensive Coordinator for the Alabama Crimson Tide on Monday. On Tuesday, he stepped off a plane in Austin and I poured over every bit of social media coverage of him arriving at the University pretty much like this:
3. The Next Right Thing Guided Journal
I'm a sucker for a New Year's Devotional or Planner or Journal. I ordered this journal by Emily P. Freeman and (NERD ALERT) as soon as I get a new pack of colorful pens, I think it's going to be great. It's subtitled "A Decision-Making Companion" which is what really made me want to buy it. I don't know about you, but for some reason I am all over the place in the last year on even the smallest decisions. I read somewhere that many people are suffering from this due to the pandemic, but honestly this has always been a problem for me. Emily also has a book, The Next Right Thing: A Simple, Soulful Practice for Making Life Decisions, which I might get, too. I can't decide. ;-)
4. Mix & Match Mama's Trader Joe's List
I had a birthday this week and all I wanted to do was get out of the house and wander around Target and Home Goods and World Market and Trader Joe's. And Bed, Bath and Beyond, if I had enough time. ;-)
(Cut to my 21 year old self realizing what has happened to her in 2021:)
Listen, Sister. There's a pandemic in your future and apparently getting out of the house at all is the equivalent of drinking punch from a trash can at a frat house, so back off.
Anyway, turns out I didn't have time to get to Trader Joe's, so I'm planning to today. Shay at Mix & Match Mama has a great guide for her favorite TJ's items right here. She even provides a Google document that you can print off to take with you to the store. I'm unreasonably excited about this.
5. Gibson Look Ribbed Jogger Set
That's it for today, Friends. I hope you have an amazing weekend.
