Friday Favorites: October 19, 2018




Happy Friday, Friends. 

It's time for my Friday link up with A Little Bit of EverythingGrace and Love, and Momfessionals

On Fridays I share things that made me happy from the week - a photo, a song, a quote, a beauty product, a recipe, a pair of cute shoes, etc. If it's a product, sometimes it's something I actually own and sometimes something I just saw online that gave me a smile. Sometimes it's serious and sometimes it's silly. I suppose I believe that God is in the simple details of life and yes, I can even find Him in a tube of lipstick. 


1. Limehouse Chicken from AllRecipes.Com

This pretty much sums up the feelings of my family and of me when it comes to dinner lately


But it is what it is and I am constantly trying to come up with a new way to make chicken. It's exhausting really.

Yes, I just admitted that it was exhausting for me to scroll the internet for a chicken recipe. Perhaps I need to look into increasing my stamina.

Anyway, luckily for everyone I happened on this recipe for Limehouse Chicken at allrecipes.com and everyone in the house liked it. It was super easy and I happened to have every single ingredient already which is a Skinner Kitchen Miracle.

6 boneless, skinless chicken thighs (I cooked 10 and there were plenty of ingredients for that many)
1 lime, juiced and zested
1/3 cup flour
1 1/2 tsp. salt (I cut this down to 3/4 tsp.)
1 Tablespoon Paprika
1/4 cup vegetable oil
2 Tablespoons brown sugar
1/2 cup chicken broth
1/2 cup white wine (I cut this down to 1/4 cup because frankly the bottle wasn't very full to begin with and I needed to have some left to drink. Don't judge.)
2 sprigs fresh mint, chopped (Ok. I lied. The Skinner Kitchen Miracle did not include mint sprigs, so I skipped this part.)

Preheat oven to 375 degrees. Place flour, salt and paprika in large ziploc bag. Sprinkle chicken thighs with lime juice. Place chicken in ziploc, seal and shake to coat.
Heat oil in skillet over medium-high heat. Cook chicken until just browned on both sides. Transfer to baking dish.
Sprinkle brown sugar and lime zest over chicken. Pour wine and broth over top. Sprinkle with mint.
Bake 45 minutes.

3. Where the Crawdads Sing


I started reading this book this week. I'm barely a few chapters in and I already love it. According to the sticker it is a Reese Witherspoon Book Club pick which I suppose is a really great endorsement because who doesn't love Reese? However, I picked it up at the recommendation of Patsy Pratt, my mom. There's not a Patsy Pratt Book Club sticker (yet), but I have never gone wrong when following my mommy's advice.


4. Shallow from A Star is Born



The lovely and talented Mrs. C. and I went to see A Star is Born on Saturday before I raced home to watch Texas beat Baylor to increase their record to 6 -1. So basically that means that on Saturday I was living my best life. This movie is so good. I loved the characters, the story, and of course, the music. There was not a superhero to be found. No robots, no lasers shooting out of eyeballs, no evil mastermind. Lady Gaga and Bradley Cooper are acting their tails off without it seeming like they're trying too hard. I think they show addiction in a realistic light and treat it with sensitivity which I always appreciate. This is the movie we've been waiting for and this song, Shallow, is my favorite from the whole soundtrack. Also, bring tissues because you will bawl your ever-lovin' eyes out.

5. First Comes Love, Then Comes Marriage . . .





. . .then comes the news this week that Meghan and Harry are going to have a baby and yours truly woke up to 400 texts about it. (Or 4 texts. Whatever. It sounds better.) I'm delighted. I don't know them. They're just regular people and regular people have babies everyday. I know this and I don't care. This gives me joy and I'm going to take it. And I realize that this isn't their child, but a friend of mine on Facebook shared these sweet photos of a little boy who broke all the rules and hustled past the rope line to give the sweet couple hugs. Cutest. Ever. Take the joy, friends. We need it.

6. This Verse

I happened on this verse last week and I prayed on it every single day. I was making a pretty bold plea and I thought this was the verse that was going to hand over exactly what I wanted. And it wasn't just what I wanted. I knew that many in my community were praying this same prayer. Then the prayer was not answered the way we wanted it to be. So, let's just say that I had some words with the Lord yesterday. And I was having a real hard time being confident. Seeing goodness here on Earth has been a struggle for so many of my friends and family lately. To be honest, I have pages and pages in a document on this very verse that I've written this week. But it's messy and angry and I'm not sure it's for anyone but the Lord and me at this point. Anyway, when my confidence is floundering I try to hold tight to the fact that God has always managed to show up at some point with some sign of goodness when I am disappointed. So I'm throwing this verse out to you. Will you pray on this? Will you be confident for those whose confidence is hard to come by these days? I sure would appreciate it.
